This delicious soup is less acidic and a little sweeter then red tomato soup and has no added sugar. Paired up with the hint of sweet basil makes it nice to eat cold just the way it is, or with a little added fresh cucumbers. You could also enjoy it warm with a little added Goat cheese to make it creamy or toasted Pepitas or fried pancetta for texture.
